Aam Panna (Raw Mango Drink)


When summers are around, body tends to dehydrate easily and now a days with so much warm climate and long sun light exposure might take you to a heat stroke. With so hot and warm climate fluids levels in the body needs to be balance so as to protect it from heat strokes. And raw mangoes are the best source of it, keeps your body cool. Remembering  my childhood, how my mum use to make this healthy and refreshing drink for us and it was compulsory everyday drink during summers. 
Aam Panna is the best way to keep your body hydrate and balncing fluid levels. It is a perfect thirst quencher which acts as an shield against heat. It detoxifies your body from within. Do try this drink and am sure you are gonna love this.
You can make a bottle full of it as I did and store it into a refrigerator for upto a week.



Ingredients:-

700 gms Raw Mango
2 tsp Black Salt
1/2 cup Fresh Mint Leaves
2 tsp Roasted Cumin Seeds
2 tsp Lemon juice
200 gms sugar
Salt to taste
Water to boil
Chaat masala to sprinkle 


Method:-

Pressure cook Raw mangoes in water.
Once pressure cooked mango is slightly cool, peel its outer skin or it can be easily removed by hands too (It will become soft and pulpy).
Do not throw the water in which mangoes were boiled. (I used the same while blending)
Take out the mango pulp and straightway throw it into a blender jar along with all the ingredients listed above and the water in which mangoes were boiled.
Blend until smoothie like texture add more water if necessary..
Serve it with the cubes of ice and a sprinkle of chaat masala.
Garnish with mint leaves and your perfect summer drink is ready to sip...ahhhaa so refreshing !!!😋😋
Drink atleast one glass of this refreshing drink a day. It's so delicious when chilled. ❤️❤️

No Fuss Mango-Lychee ICE CREAM CAKE

Want something different with regular ice creams and usual cakes? Here is one scientific formula ,i.e. ICE CREAM + CAKE = Ice cream Cake ...:). Well jokes apart, name says "NO FUSS"---- but yes it is really a no fuss ice cream cake where there is no chance of getting wrong and is made with those 7 simple ingredients., Yes 7 can make wonder...:)

No Fuss Mango-Lychee ICE CREAM CAKE


Ingredients:
2 cups mango Wafer biscuits (broken up in to small little crumbs, if you don't get mango use pineapple wafer biscuits)
2 pints of plain Vanilla Ice cream (About 1000 ml)
5 large Nicely Riped Kesar mangoes puree..
1 1/2 cup mango pieces (cut in to cube shape)
10 Lychees (Remove seeds from inside and make puree out of it, with little chunks left in it)
3 tbps roasted chopped Pistachios
3 tbsp roasted chopped Almonds


Recipe:

  • Let your ice cream soften either at room temperature in your kitchen or in fridge (Not in Freezer).
  • Once soften, empty the soften ice cream pints, Mango Wafer biscuit Crumbs, Kesar Mango Puree, Mango Pieces (Cut in to small cube shape), Semi pureed Lychees, Roasted chopped Pistachios and Roasted chopped Almonds in to the large bowl.
  • Mix all well with your regular kitchen spatula or a beater. (Not the electric beater, else the wafer biscuits crumbs, chunks of mango, lychee, pistachios and almond will get pureed inside, so its better to use normal beater and mix all well).
  • Line a plastic Cling film in a Cake tin and pour the Ice cream mixture in it, cover the top with cling film and place it in a freezer to firm up.
  • Before serving wait for 2 minutes, Open cling wrap on top and unmould the cake on to your serving plate, garnish with sliced mangoes and Lychess around.
  • Cut the slice and serve with some more chunks of mangoes, roasted almonds and pistachios for little more crunch and Enjoy your dessert.

Yummy Sugar Free Mango Lassi

Mango Lassiiiiii... Can not resist without this in summer. Sooo Cool and refreshing, your taste buds will get highly impress of it... With some few typical mango lassi's, I have changed a bit of its ingredients as per my taste. Do try.

Yummy Sugar free Mango Lassi

Ingredients:
3 cups Mango Puree (I used Alphonso's Puree)
1 1/2 cup Full fat Dahi / Yogurt. (Can opt for Low Fat Yogurt too)
1/2 cup low fat milk
1/4 cup Honey approx. (depends upon the sweetness of mangoes.)
1 tsp green cardamom powder

For Garnishing:
1/2 cup of mango cut into cube shape (can use even more, tastes well when you get that small chunks in your mouth while having lassi)
1/2 cup Chopped dry fruits (cashwes, almonds, Pistachios)

Recipe:

  • In a mixer juicer jar, mix mango puree with full fat Dahi / Yogurt, low fat milk, honey, and green cardomom powder.
  • Grind this in mixer until smooth
  • Pour in a glass over few ice cubes
  • Garnish it with mangoes cut in to cube shapes (i would suggest to add more chunks, tastes really well) and chopped dry fruits..Even you can use some whipped cream on top about a tsp. Looks even more tempting.
