My favourite Vacation Recipe. Vacation Recipe-because you get Raw mangoes in summer and my grandmother who is specialists in this kairi ki sabji always use to make this sabji whenever i visit her in vacations and this recalls my those childhood days. This is for her.
This Sabji is tangy sweet and with full of flavors.
Ingredients:
1 1/2 cup Kairi Cut in to Cube shape (Raw Mango)
5 tbsp Jagerry
1/2 tsp turmeric powder
1/2 tsp Red Chilly Powder
1 tsp Cumin Powder
1 tsp Coriander Powder
1/2 tsp Dry Fenugreek powder
1 tsp Fennel Powder
1/2 tsp Garam Masala Powder
2 tbsp oil

1 Bay Leaf
Pinch Of Asafoetida Powder
Salt to taste

Note: Instead of Jaggery you can even use white sugar or brown sugar...

Recipe:
- In a pan pour 2 tbsp of oil. Add Panch Phoran Masala Mix with bay leaf and Asafoetida powder.
- Once it splutters add raw mango. Mix and add all dry spices- Red Chilly Powder, Turmeric Powder, Cumin Powder, coriander powder, Garam masala powder, Fenugreek powder, Fennel Powder and salt to taste.
- Mix All well and simmer it on a low flame for about 5-6 minutes or until mangoes are soft. (sprinkle water if require).
- After mangoes go soft, add jagerry and mix.
- Stir again for 4-5 minutes or until jaggery is nicely melted in to it. Add water a little only if required than.
